Watermill Kitchen + Barfeatures locally sourced and fresh ingredients taking the region's favorite comfort food to the next level

Locals and visitors alike can now explore Coralville's newest restaurant, Watermill Kitchen + Bar. Inspired by the mills historically found along the banks of the Iowa River, the restaurant offers a newly crafted menu featuring locally sourced and fresh ingredients as well as a menu of signature handcrafted cocktails. The beautiful, new expansive restaurant, adjacent to the Hyatt Regency Coralville Hotel & Conference Center, is the last phase of property's multi-million-dollar transformation.

"Watermill Kitchen + Bar is a modern nod to the past," said Matthew Hill, director of food & beverage of Hyatt Regency Coralville Hotel & Conference Center. "As with the rest of the renovation being inspired by our local community, the essence of Watermill Kitchen + Bar is to honor our Midwestern and Iowan history with classic yet elevated comfort food we all know and love. There are also highly curated dishes introducing new flavors that aim to inspire diners to try something unique and special."

The menu features a variety of options for breakfast, lunch, dinner, and weekend specials that blend Midwest favorites with new flavors for a delicious dining experience any time of the day. From morning starters, farm-to-table salads, satisfying sandwiches, shareable plates, and innovative entrees there is something to satisfy each and everyone's tastebuds.

The menu features several signature specialties and craft cocktails:

  • Crumpet Benedict with cracklins and cherry smoked pork belly served with a grain mustard hollandaise sauce.
  • Iowa Corn Cake, a local sweet corn fritter topped with rock shrimp and Cajun remoulade.
  • Braised Short Rib with a red wine demi-glace, saloon slaw and apple cabbage colcannon.
  • A variety of locally sourced steaks, including a 10 oz sirloin, 7 oz filet and an 18 oz bone-in ribeye all featuring butter braised mushrooms and apple cabbage colcannon.
  • Barbara's Orange Cake with a Grand Marnier drizzle - an ode to Executive Sous Chef Tony Zinn's mother, Barbara, who baked a mandarin orange cake for his birthday throughout his childhood.
  • A variety of cocktails and mocktails, including Blackberry Smash featuring Iowa's own Templeton Rye Whiskey and Fully Rested with spiritless Jalisco 55 Reposado, pineapple juice, lemon juice and honey.

Watermill Kitchen + Bar is partnering with local farms and family businesses in the community for its ingredients, including Kalona Creamery, Amana Meat Shot & Smokehouse, Dan and Debbie's Creamery, and Farmers Hen House, among others.

The reimagined restaurant includes a spacious outdoor patio with a fire table and comfortable seating for those looking to soak up an Iowa afternoon or evening, an expansive dining room and a newly redesigned private dining space that can seat up to 18 guests. The private dining space features a flexible room layout that can accommodate social gatherings as well as business meetings and offers a private door leading out to the new patio for expanded indoor/outdoor event experiences.

Consistent with the aesthetic of the Hyatt Regency Coralville, Watermill Kitchen + Bar features natural wood elements and a fresh color palette. Hand-selected and curated local art from a number of Iowa's award-winning painters, illustrators, printmakers, fine artists and photographersadorn the walls, enhancing the restaurant's ambience and further solidifying its tie to the community. The restaurant is also home to Hawk Talk with Lisa Bluder and Hawk Talk with Fran McCaffery, the weekly radio shows featuring University of Iowa head women's and men's basketball coaches.
